We had an amazing weekend with Josh, Jess, Austin, Dobson, Evelyn and Mick. We visited with everyone at Jess and Austin’s house where we enjoyed some amazing KC BBQ. One of our favorite places is Johnny’s BBQ with their specialty being ribs! We learned that an employee bought it. It was renamed to J’s BBQ. The name changed but the BBQ was still as good as I remembered. It was great to see everyone and spend time catching up. Theresa even played hide and seek with Evelyn and Mick. We called it an early night and made a stop at Walmart for supplies. We are hosting brunch at the RV on Sunday. The Grand Kids are excited to see Grandpa and Grandma’s RV!
Sunday brunch was a great time. I used the Blackstone grill to cook a pancake breakfast for everyone. I started off cooking turkey bacon as that is the grand kids favorite. Cooking it was interesting. It was like cooking bologna because it turned more red. The corners even curled up. Not on my list to cook again any time soon! Grandma was having fun with Evelyn helping make the pancake batter. They did a great job and I used our new pancake dispenser to cook them on the Blackstone. The pancake dispenser was awesome and highly recommend getting for your Blackstone. I’m going to also use it in the house when we get home. No mess and perfect pancakes! The cooking of the scrambled eggs was a learning experience or just not thinking on my part. I poured the entire bowl of scrambled eggs on the grill. I quickly realized that they were making their way to the grease catcher. I tried to move them away from the drain. This was somewhat successful. Nevertheless, I am sure I wasted about a fourth of the eggs. Note to self, either I need an egg ring, level the grill, or cook smaller batches. As I finish the scrambled eggs, I realize one key menu item missing the hash browns. I put them on the grill. We begin to enjoy the rest of the breakfast before it gets cold. The hash browns became dessert! I am still Lovin’ the Blackstone! The grand kids devoured the breakfast which made me smile as my confirmation that I did a great job.
We finished breakfast just in time for the sky to open up with a down pour. Luckily we were under the canopy and rushed to get everything inside the RV. We can’t get away from the rain! The grand kids had some time in the RV to explore. They learned how to change the color of the fireplace flames. One cute moment, Evelyn was at the pantry door asking grandma if that was the door to the kitchen. We wrapped up the time with Jess, Austin and the grand kids enjoying the mini zip line at the RV park. Sharing photos below for everyone to enjoy.
We spent the evening having dinner with Theresa’s best friend Susan and Warren. Enjoyed the conversation and great food!
